Today I did a stupid thing.
I had put a meeting in my calendar to hold the time. And when that meeting was canceled, I never deleted it out of my calendar. And promptly forgot about the email canceling the meeting.
The meeting was up in San Francisco. At 5PM.
If you're from the Bay Area you can do the math...although my office is only about 20 miles from the city, it tooke me over an hour to get to the meeting.
At which point I learned I battled rush hour city traffic for nothing. And had to get back on the road for what would surely be about a 90 minute ride home, still in rush hour traffic.
And let's not forget that a Bay Area visit from President Obama made my morning commute worse than usual, clocking in at almost an hour too.
Yeah, I was a tiny bit frustrated by the time I got home.
Not in the mood to cook. Nothing much in the house.
But I finally dragged my ass into the kitchen and made something simple (and sinfully scrumptious): Seitan with Pine Nuts.
I sauteed some garlic and pine nuts in olive oil. (I use frozen minced garlic cubes form Trader Joe's...one of my favorite things, and I buy pine nuts in bulk.)
I added a package of seitan. (No, I've never made my own seitan, but yes, the idea totally intrigues me.)
Finally, I added some vegan "bacon" bits and some nutritional yeast .
That was some lucious stuff. Quick but indulgent. Rich and savory.
No, food doesn't cure intense annoyance at wasting my own time (not to mention gas) but ya gotta eat, right?
What's you go-to quick meal that you can find the energy to make, no matter how tired (and cranky) you may be?
OMG that sounds so awful!!! I would have been so annoyed but your dinner sounds kind of awesome! My go to after a day like that would have been noodles with earth balance and nooch. Maybe some greens if I wasn't near dead already.

Yours sounds good too. I would have thrown in greens if I'd had any that were good.
Maybe the title of this post should be "Nooch makes everything better"!
