Tonight I made another recipe from this month's #VegCookbookClub choice Chloe's Kitchen. It's one that I had bookmarked from the word go: Garlicky Greens.
I love garlic. I love greens (and have broadened by greens-eating horizon so much in the last year or two).
The recipe couldn't be more simple...greens, olive oil, salt, pepper, garlic, lemon juice.
So, of course, I had to change it up just a tiny bit.
For the greens I used kale and green swiss chard. After sauteeing it in olive oil and adding salt and pepper, I added the garlic (and quite a bit more than the recipe called for.
Now, I also decided to toss in two other ingredients: White wine and a chopped pasilla pepper. I saved the juice from one lemon for last and stirred it all together.
I popped a potato in the microwave to eat with my greens. (An organic potato, because thanks to this post I'll never eat a non-organic one again, if I can help it.)
You may wonder, why no awesome photo?
Well, I didn't time the greens and potato exactly right, and the greens got a tiny bit overcooked. Didn't affect the flavor which was as lemon-garlicky-good as you'd imagine, but the color went from that lovely bright green to a little too dark...it just didn't photograph well. Boo.
But it tasted great! Great Garlicky Greens.
